Weigh-In Wednesday #3

Hey guys,

Sorry Ive been rather MIA lately. Been busy and stressed out and that really isnt the best combination for me. Anyways…

My weight today was 187.2. Thats a loss of 2 lbs since last week.

I honestly cant tell you how happy I am about this! I felt really hopeless last week after my maintain. It wasnt too far into my weight loss journey and I already felt like a failure! But this week truly made up for it! I know that I can do this I just have to make small lifestyle changes and I will be successful! I can lose this weight. I can be happy.

I feel like I have a whole new level of motivation to complete what I have started. I feel very encouraged and empowered. Being at a healthy weight doesnt seem like such a distant dream anymore but rather an attainable blissful goal. And I am so stoked to embark on the journey!

New Salad Recipes!

Hey guys!

Today I have some wonderful salad recipes for you! In this upcoming weeks #CHANGE video you can watch the clip that I made of all of these salads because I brought them to work. One for lunch with some almonds and the other with a banana. I hope that you enjoy and let me know what you think!

The first on is called Guacamole Salad! It is a play on Natalia Rose’s recipe from The Raw Food Detox Diet. I used to own this book but last summer my mom went through all of the books in the house and that one went into the donation box! :O It is one of my favorite go to salads because you don’t need to add any salad dressing! You just assemble it upside down and then toss together. It is to die for!

Guacamole Salad

2-4 Cups Romaine Lettuce (or the like)

1 slicing tomato

1/4 avocado

2 cloves garlic

Juice of 1/2 lemon

handful of cilantro

salt and pepper to taste

To assemble salad:

Place cubed tomato and avocado in bottom of bowl. Add lemon juice, minced garlic, cilantro and salt and pepper. Stir gently. Add lettuce. Toss until lettuce is fully coated with vegetables and “dressing”.

Im telling you guys, easiest, yummiest salad ever! I always make sure to eat some almonds or some other protein with this meal in order to really pack that protein punch!

Second is the Spinach Powerhouse Salad. I love this one because it just makes you feel healthier after you eat it! This can be my go-to if I had a cheat item that day and my body needs some healthy fuel! I usually top it with a simple homemade balsamic vinaigrette.

Spinach Powerhouse Salad

2-4 Cups Baby Spinach (depending on how hungry you are

3 oz pre-cooked chicken breast, sliced

1 Tbs slivered or sliced almonds

1 tbs Dried Cranberries

1 tsp Parmesan Cheese.

Simple Balsamic Vinaigrette 

2 Tbs Balsamic Vinegar

1 Tbs Extra Virgin Olive Oil

Dash of Black pepper

Dash of Italian Seasoning

To assemble:

Layer ingredients in the order they are listed. When ready to eat top with homemade vinaigrette and enjoy!

Weigh-In Wednesday #2

Hey guys!

Today was weigh in wednesday #2.

I guess I was hoping for much better results. I didn’t lose anything this week but I didn’t gain anything either. I think a lot of this has to do with some things that are out of my control. Nonetheless.

I wanted to talk a bit about my previous post about the fork in the road. This is the epitome of that for me. This is the moment in all of my previous weight loss that I have given up. The moment that I stop seeing results like maintaining my weight is the moment that I give up. If I just continued on then things could be different.

With that said I AM NOT going to give up this time! I am worth it! I know I am. I believe it and I see the potential within myself. Just because I may not have lost weight this week doesn’t mean Im not going to lose any next week. So its back to the grind for me.

Almond Butter Protein Pancakes

Hello all!

Last night I made Almond Butter Protein Pancakes with Truly Jess’ Coconut Protein Fudge! They were so decadent! Here is the recipe!

The Almond Butter Protein Pancakes were actually a play on one of Jess’ Protein Pancake recipes. I just altered her pumpkin recipe!

Pancakes: 

I scoop Protein powder

1/4 cup egg whites

1/4 tsp Baking Powder

1 TBS Almond Butter

1TBS Water

Stevia to taste

1 tsp Coconut Oil

Heat Skillet to medium low heat. Add Coconut Oil.

Combine all ingredients except for the water. Depending on the size of your protein powder scoop you may not need the water at all. If you need it, add it!

Place scoop of batter in heated pan. (I used an ice cream scoop) While your pancake is cooking make coconut protein fudge.

I also altered this recipe slightly. I don’t have carob powder at home so I just used coco powder.

Coconut Protein Fudge:

1 TBS Coconut Oil

1 TBS Coco Powder

1 Scoop Protein Powder

1 TBS Water

Stevia to taste

While making the fudge I forgot to melt the coconut oil first before adding the dry ingredients. I just set my container near the pan that I was cooking on. Be very careful if you are going to use this method.

When the pancakes start to bubble around the edges and when the bubbles pop and don’t fill in again its time to flip! My rule of thumb is always 10 seconds on the flip side and then onto a plate.

Repeat until all pancakes are created and top with Coconut Protein Fudge! Yum!

The Fork in the Road: Give up or keep going?

Hey Guys,

Hope you all had a splendid weekend! Just wanted to talk about something that has been at the forefront of my mind this week, and is really motivating me to continue on this journey. Yes, its the dreaded Restricted Diet vs. The Lifestyle Change.

This is something that I think I have struggled with and what has caused me to gain any of the weight I have ever lost back. I will go on a restricted diet. Not like super super restrictive but just enough to make me crazy. I will stay on track for a week or two weeks and then I will totally lose it and go back to my old habits. I feel like this isnt just me either.

So I have pledged to myself that this is a journey. Its a lifestyle change and it is not going to happen overnight. Just because the results are not instantaneous does not mean the results arent there. They are! I lost 2.6 lbs last week. Who could be upset with those numbers.

But I need not give up. This is the point where I have always given up before. And this time, I refuse! I AM worth it, and because of that I will push myself through this hump and keep going. Im going to keep exercising and eating on track, and making little changes to my lifestyle for the better!

I am worth it, and you are too! I hope you all have had a wonderful weekend and I look froward to the week coming!

Weigh-In Wednesday! #1

Hey Guys!

This is my first official Weigh-in Wednesday and I am super excited!

Im mostly so excited because I weighed in at 189.2 today! That is a loss of 2.6 lbs. I havent been this weight in a long time and to see the scale proclaim it made my day!

I havent been this weight since before I moved here a year ago. Its just so crazy. This is absolute proof that if you have the determination, support and willpower, you can do anything!

Working out this week really has done wonders for me. I feel like I am unstoppable. For once in my life I feel like weight loss is possible and that I can reach my goals. It doesnt seem like this far far away place that will never be attainable, and that feels oh sooooo good!

I hope that all of you guys have had a wonderful week so far!
